    Terrific (or possibly a better adj.) Thanksgiving Day Treats
    Fulfill Your Family's Wishes, Make These Delicious Dishes

    As the costumes are tossed aside and masks peeled off, the holiday focus shifts from gobbling up pillowcases of every cavity-inducing sweet to gobbling 100 pound overweight turkeys! A personal favorite holiday of many, (think of all the food!) Thanksgiving is just around the corner. What are you bringing to the table? Try these quick and easy recipes for simple and easy dining:

    Thanksgiving Recipes:

    Sugar Coated Pecans (12 Servings)

    Ingredients:
    2 egg whites
    1 tablespoon water
    1 pound pecan halves
    1 cup white sugar
    3/4 teaspoon salt
    1 teaspoon ground cinnamon

    Directions:
    1. Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.
    2. In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon. Alternatively, you can use 2 gallon sized ziploc bags instead of bowls to coat the nuts.
    3. Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.
    4. Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes.

    Spiced Pumpkin Seeds (8 Servings)

    Ingredients:
    1 1/2 tablespoons margarine (butter and olive oil works as well), melted
    1/2 teaspoon salt (amount can be doubled for saltier taste)
    1/8 teaspoon garlic salt or powder (amount can be doubled for saltier taste)
    2 teaspoons Worcestershire sauce
    2 cups raw whole pumpkin seeds

    Directions:
    1. Preheat oven to 300 degrees F (135 degrees C).
    2. Combine the margarine/butter/olive oil, salt, garlic salt/powder, Worcestershire sauce and pumpkin seeds. Mix thoroughly and place in shallow baking dish.
    3. Bake for 1 hour, stirring occasionally. Note: Times may differ so make sure to keep an eye on the seeds and don't let them burn!)

    Roasted Garlic Mashed Potatoes (4 Servings)

    Ingredients:
    2 lbs potatoes
    1 head garlic
    1 tablespoon olive oil
    1/4 cup sour cream
    4 tablespoons butter
    milk or cream, if needed
    salt
    white pepper

    Directions:
    1. Separate head of garlic into individual cloves.
    2. Toss in olive oil and wrap tightly in small piece of aluminum foil.
    3. Bake in 350°F (180°C) oven for 45 minutes.
    4. When the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.
    5. Mash the roasted garlic with a fork, or force through a fine strainer.
    6. If you use a ricer as recommended below, simply rice the garlic along with the potatoes.
    7. Peel and boil potatoes in salted water until tender.
    8. Force the cooked potatoes through a ricer (recommended) or mash by your usual method.
    9. Put the riced potatoes, garlic, sour cream, butter, and salt and white pepper in a mixer bowl, and whip at medium speed until smooth.
    10. Add cream or milk to adjust consistency.
